Raspberry Jello Salad

2 small pkgs. Raspberry Jello
2 pkgs. Raspberries
8 oz Cream cheese
8 oz. Coolwhip

Bring 2 C water to a boil and then add Jello to dissolve.  Add cream cheese while jello is still hot.  Then add 1 C. cold water.  Put in the fridge until slightly set. 

Add coolwhip and mix with a whisk. Fold in raspberries.  Put in the fridge to set up.

Raspberry Cheesecake Salad

3 boxes Cheesecake instant pudding
3 C. milk
8-10 graham crackers- crumbled
3 T. butter- melted
2 T. sugar
Cool whip (10-11oz)
1 small bag frozen raspberries

Mix Cheesecake pudding with milk using a wire whisk. In a separate bowl, mix graham crackers, sugar and butter. sugar into it. Pour over cheesecake pudding and mix in cool whip. Delicately fold in raspberries.

Grape Salad

2 lbs. green grapes
2 lbs. red grapes
Wash, dry, and cut in half.

Cream together and mix with grapes:
8 oz. cream cheese
8 oz. sour cream
1/2 C. sugar
1 tsp. vanilla

Topping:
1 C. brown sugar
1 C. chopped pecans

Cajun Chicken Pasta

1/2 pound linguine pasta
2 boneless, skinless chicken breast halves, sliced into thin strips
1 T. and 1 tsp. Cajun seasoning
1/4 C. butter
2 green bell pepper, chopped
1 red bell pepper, chopped
8 fresh mushrooms, sliced
2 green onion, minced
3 C. heavy cream
2 T. cornstarch
1/2 tsp. dried basil
1/2 tsp. lemon pepper
1/2 tsp. salt
1/4 tsp. garlic powder
1/4 tsp. ground black pepper
1/4 C. grated Parmesan cheese


Bring a large pot of lightly salted water to a boil. Add linguini pasta, and cook for 8 to 10 minutes, or until al dente; drain. Meanwhile, place chicken and Cajun seasoning in a bowl, and toss to coat. In a large skillet over medium heat, saute chicken in butter until no longer pink and juices run clear, about 5 to 7 minutes. Add green and red bell peppers, sliced mushrooms and green onions; cook for 2 to 3 minutes. Reduce heat, and stir in heavy cream. Season the sauce with basil, lemon pepper, salt, garlic powder and ground black pepper, and heat through. Add cornstarch to thicken (mix with cold water before adding to the sauce). In a large bowl, toss linguini with sauce. Sprinkle with grated Parmesan cheese.

Cowboy Cookies

1 C. Shortening
1 C. Brown sugar
1 C. Sugar
2 Eggs
1 tsp. Vanilla
2 C. Flour
½ tsp. Salt
1 tsp. Soda
1/2 tsp. Baking powder
2 C. Oatmeal
1 C. Coconut
1 pkg. Semi- sweet chocolate chips (or you can use raisins instead....my personal favorite)

Cream shortening and sugar together and mix until fluffy. Add eggs and vanilla. Mix dry ingredients and add to creamed mixture. Add oatmeal, coconut, and chocolate chips.
Bake at 350° for 12-15 minutes.

Pork Barbacoa {like Cafe' Rio}

I prefer this Pork Barbacoa recipe to the other one I have on here. I think this one tastes more like Cafe' Rio's pork.

3-4 lbs pork roast or pork loin
1/4 teaspoon oregano
1/4 teaspoon cumin
1/2 teaspoon salt
1/2 onion
2 garlic cloves
water, to cover

Cut pork in large chunks. Put in large crock pot and add water just to cover. Add seasonings. Cut onion in 4 large pieces, crush garlic and add to water. Cook pork on low all day or on high for 3 to 4 hours, or until tender and pork pulls apart easily. Drain water and remove onions and garlic. Pull pork and return to crock pot.

Sauce
1 (14 ounce) can enchilada sauce
3/4 cup Coca-Cola or Dr. Pepper cola
1 cup brown sugar

In a separate container mix enchilada sauce, soda and sugar. Add to pork in the crock pot. Cook 1 hour longer.

Triple Berry Salad

1 lg pkg instant vanilla pudding
32 oz container vanilla yogurt
8 oz Cool Whip
Frozen or fresh berries


In a large bowl whisk together pudding and yogurt until well mixed. Add Cool Whip. A few hours before serving add frozen fruit. (I used a package of frozen mixed berries from Walmart.)
