Mini Cheesecakes

2- 8oz pkgs. Cream cheese (softened)
3/4 C. Sugar
1 T. Lemon juice
1 tsp. Vanilla
2 Eggs
Vanilla wafers

Mix cream cheese and sugar until smooth. Add eggs one at a time. Add Lemon juice and vanilla. Put a vanilla wafer on the bottom of cupcake liner. Fill 2/3 full with cheesecake mixture. Bake at 350° for 20 minutes or until set. Top with topping just before serving. (makes 18)
